It allows you to become an expert.
When you choose to have a “specialty” it allows you to become your local expert. This will allow you the time to focus on becoming your local professional in your niche. Even in my very small town customers will buy cookies from my bakery and cupcakes from another baker in town. This is because we have dialed in our niche and become the local expert bakers in those areas and our customers know that. And since they know that they are happy to recommend us to their friends and family in town too ! And as a local bakery word of mouth marketing is sooooo important !!!
Customers will pay more.
Your customers will value you at a higher price point if you have a specialty! Just like if you are a home owner with a backed up sink you’d rather have licensed plumber come to your rescue than a handy man. Same goes for your baking business! If your customer is looking for decorated sugar cookies but that’s only one thing out of fifty on your menu , even if your cookies are amazing its hard for the customer to know that! However if all you offer is cookies it makes it really obvious that this is your sweet spot and that they can trust you to bake THE BEST cookies in town.
You will be more efficient.
If you’ve gone down the baking rabbit hole like I have then you know the absurd amount of tools and ingredients that are out their that you “need” to perfect a certain type of bake. Whether its cookie cutters and meringue powder or cake rings and turntables every bake requires a special set of tools and ingredients. We’ve all heard the quote complexity is the enemy of execution, So as someone who loves to keep the momentum going I highly recommend picking a niche especially when you’re starting out.
